4 tsp. olive oil
1-2 onions, chopped
2 cloves garlic, minced
3 cups chicken broth
1/2 tsp. ground coriander
2 Tbsp. lime juice
1 tsp. ground cumin
1/2 tsp. dried oregano
1/4 tsp. Tabasco sauce (or other hot sauce)
1 can white corn, drained
1 can great northern beans, drained
8 oz. cooked chicken breast, shredded
Heat oil in a soup pot over medium heat. Add onions and garlic and cook until onions are soft. Stir in remaining ingredients except chicken. Heat to boiling. Reduce heat and simmer 20 minutes. Add chicken and simmer until hot. Serves 4-6.
